Sacrata Godello
Sacrata Blanco is a white wine made by Bodegas y Viñedos Raul Pérez, a brilliant expression of the cooler Bibei district within the Ribeira Sacra DO. Bibei’s higher elevation vineyards have cooler nights, which results in a slower ripening process and more expressive aromas and flavors. If Amandi by the Sil River has a warmer, more “Mediterranean” character, Bibei exhibits a cooler, fresher, more “Atlantic” or “Continental” character. Here, the Godello grape combines flavors of thyme and dry herbs, and, due to cooler nights, it’s brighter and less structured than in Bierzo. Raul Pérez is one of Spain’s finest winemakers and some wine trade veterans believe Raul is among a handful of the best winemakers in the world. Raul believes great wines are made in the vineyard and he has an uncanny knack for knowing what his vineyards need to achieve their greatest potential. As his virtuoso winemaking talent has become known, many winemakers now seek to collaborate with Raul.

This white wine that will age extremely well. Raul's minimal use of oak emphasizes the bright elements of the Godello grape. Sacrata Godello communicates the mineral aspect of this unique terroir within the Bibei subdistrict of Ribeira Sacra. Made from organically grown grapes.

Pairing Suggestions:
Sacrata Godello is a full-bodied gutsy wine in the model of the biggest whites from the northern Rhone and northern Italy. Grilled swordfish steaks with herbs, grilled calamari and octopus and rich, “stinky” cheeses like Epoisses, Taleggio, and Morbier. This wine has enough spine and structure for an unusual pairing like steak tartare or beef carpaccio.
Vinification and ageing:
The crushed grapes mix with their juice for 24 hours. The wine does not undergo malolactic fermentation. The wine is aged in French oak barrels for only two months to retain as much of the Godello’s fresh, earthy, mineral characters as possible.

Location, Soil, Climate:
In Zone #1, Ribeira Sacra is one of the most inland wine regions of Galicia. Located in the south of the province of Lugo and in the north of the province of Ourense, the zone and entity called Ribeira Sacra encompasses 17 municipalities. Ribeira Sacra, or "Sacred Shore," has 5 subzones from north to south: 1. Chantada, 2. Amandi, in the municipality of Monforte de Lemos, 3. Ribeiras do Miño, the largest subzone, 4. Ribeiras do Sil-Ourense, and 5. Quiroga-Bibei. Sacrata is made within the Bibei subzone, one of the coolest and highest in elevation. The soil is alluvial with slate. The terraces are usually very small, making mechanical vineyard work such as pruning and harvesting impossible. Access to the vineyards is often very difficult. Ribeira Sacra’s climate is more Continental/Mediterranean than Atlantic. Here, average yearly rainfall is 32 inches versus 66 inches in Pontevedra, near the Atlantic Ocean. Average temperatures from April-October are 64.50°F.
Tasting notes:
Sacrata Blanco is 100% Godello exhibits a super-fragrant bouquet of mineral, fennel, baking spices, and apple pie. Rich, concentrated and lingering on the palate, this is a compelling example of how good Godello can be.
